Brewery History:Katsuyama Shuzo was founded in 1688 in Sendai, Miyagi as the official brewer to the Date clan. The brewery maintains traditional methods with high-quality Yamada Nishiki and low-temperature fermentation, producing elegant, umami-rich sake. The “Den” series represents the pinnacle of their Junmai Daiginjo style.
Sake Introduction:The Katsuyama Den Junmai Daiginjo is a premium pure rice daiginjo made with Hyogo’s top-grade Yamada Nishiki polished to 35%. Brewed traditionally and bag-pressed (fukuro-shibori) without added alcohol, it showcases gorgeous fruit aroma and rich, clean umami – the modern expression of Katsuyama’s “Samurai Style”.
Tasting Notes:Nosing: Fragrant with white peach, pear, citrus, melon and delicate floral notes.Palate: Rounded and full-bodied – rich fruit sweetness, refined umami and soft acidity with excellent depth.Finish: Long and refreshing with lingering fruit and mineral elegance.
