Brewery Background: Located in Minato-ku, Tokyo, Tokyo Port Brewing revived the century-old Wakamatsuya brewery in 2011. Operating in a compact 22-tsubo facility, it blends modern equipment with traditional techniques to craft “MADE IN TOKYO” sake, frequently featured in media.
Sake Characteristics: This Junmai Ginjo Muroka Genshu uses Okayama-grown Omachi rice, polished to 60%, with a 14% ABV. Employing NO.28 yeast (high malic acid), it is unfiltered and undiluted, preserving robust flavors. As a seasonal summer Namazake, it requires refrigeration.
Flavor Profile: The aroma is vibrant with apple, citrus, and subtle floral notes. The palate is crisp and clean, with gentle acidity, showcasing Omachi rice’s rounded umami and light sweetness, finishing refreshingly, ideal for summer.
