Kavalan Distillery, founded in 2005 by the King Car Group in Yilan County, Taiwan, represents a bold venture into the world of single malt whisky production in a subtropical environment. Named after the indigenous Kavalan people who historically inhabited the region, and the old name of Yilan County itself, the distillery was established to create premium whisky using local resources and innovative techniques. The King Car Group, a major Taiwanese beverage company led by Chairman Tien-Tsai Lee, drew inspiration from Scotland's whisky traditions but adapted them to Taiwan's unique climate. Construction began in April 2005, and astonishingly, the first spirit was distilled just nine months later in December 2005, with full production commencing on March 11, 2006. The first bottling of Kavalan Single Malt Whisky was released in 2008, marking Taiwan's entry into the global whisky scene.
Situated in the lush, humid lowlands of Yilan, Kavalan sources its water from the pure, mineral-rich meltwaters of Snow Mountain (Hsuehshan), which contribute to the whisky's distinctive character. The intense heat and humidity accelerate maturation, allowing the whisky to age three to four times faster than in cooler climates like Scotland, resulting in rich, complex flavors in a shorter time. This subtropical aging process, combined with high-quality imported barley and custom copper stills designed with Scottish expertise, set Kavalan apart from the start.
Kavalan's rise to prominence was swift and remarkable. In 2009, it earned its first international award, and by 2010, it secured gold at the International Spirits Challenge. A pivotal moment came in 2012 during a blind tasting event in Scotland, where Kavalan outperformed established Scottish malts, shocking the industry and earning widespread acclaim. Since then, Kavalan has collected over 1,000 awards, including multiple "World's Best Single Malt" honors at the World Whiskies Awards and top prizes at the San Francisco World Spirits Competition. Innovations like the Solist series and various cask finishes have expanded its portfolio, blending tradition with creativity.
Today, as Taiwan's first and only family-owned whisky distillery, Kavalan continues to innovate, exporting to over 70 countries and inspiring a new wave of Asian whisky producers. Its success underscores the potential of non-traditional regions in crafting world-class spirits, transforming Yilan from a quiet agricultural area into a whisky destination with tours and tastings attracting global enthusiasts.
Kavalan Triple Sherry Cask is a captivating single malt whisky that showcases the artistry of blending spirits matured in three distinct sherry casks: Oloroso, Pedro Ximénez, and Moscatel. This triple maturation imparts a symphony of flavors, creating a balanced and indulgent profile that's both fruity and sweet, with a subtropical twist from Taiwan's unique aging conditions. Bottled at 40% ABV, it's non-chill filtered to preserve its natural oils and textures, resulting in a rich, amber-hued liquid that's approachable yet complex.
Nosing: The nose is an opulent bouquet of ripe, mature berries including cherry, blueberry, strawberry, and raspberry, intertwined with dried fruits such as raisins, figs, and candied plums. Fresh scents of grapes and citrus zest provide a vibrant lift, while indulgent notes of chocolate brownie, milk chocolate, hard toffee, and caramel add sweetness. Subtle spices like cinnamon, nutmeg, and ginger emerge, alongside hints of vanilla pod, honeyed florals, red apple, watermelon syrup, and a touch of cedarwood, evoking the aroma of icing on a fruit cake. The overall aroma is rich, full-bodied, and inviting, with the sweeter sherry influences shining through.
Palate: On the palate, it unfolds with a silky-smooth, creamy mouthfeel that's luxurious and coating. Waves of dried fruits—raisins, figs, and candied plums—mingle seamlessly with plump berry fruits like cherry and blueberry, complemented by honey, caramel, and toffee sweetness. Fresh grape and citrus notes persist, balanced by mild spices including ginger and cinnamon. The body is medium to full, with a moderate sweetness that avoids overpowering, allowing subtle floral and chocolate undertones to develop. This creates an elegant harmony, where the triple sherry casks contribute layers of depth without overwhelming the distillate's inherent fruitiness.
Finish: The finish is lingering yet moderately long, with residual dried fruits and sherry notes fading gracefully. A mild bitterness adds complexity, countering the sweetness, while echoes of chocolate, spice, and toffee persist. The dried fruit lingers subtly, leaving a clean, satisfying aftertaste that's not overly dry. Overall, this whisky offers a well-rounded experience, perfect for sipping neat or with a drop of water to enhance its nuances.
