This year, the Kanikiku 39 Special Thanks series is re-launched with an eye-catching fiery red label. This sake is brewed using the popular sake rice Omachi, polished to 39%, combined with the exquisite craftsmanship of Kanikiku Brewery, expressing the deep gratitude of the brewers. The diversity, sweet depth, and complex flavors brought by Omachi rice are perfectly blended in this bottle. This is a Nakadori Namazume sake, where only the best and most stable part of the sake is selected for bottling, accompanied by a black cylindrical gift box and original paper bag, limited to 1500 boxes, making it extremely precious.
Upon opening the bottle, a crisp "pop" sound is heard, followed by the luxurious aromas of apple and pineapple. Upon tasting, one can enjoy the sweet flavors of apple, honey, and pear, along with a fresh acidity and a strong citrus tang. Although the sake is rich in flavor, it is not cloying; the aftertaste carries a clear rice sweetness with no bitterness, providing a more mellow taste compared to the raw sake, with reduced astringency.
Kanikiku Brewery is located near the famous Kujukuri Beach in Chiba Prefecture, where the groundwater of medium hardness is rich in minerals, making it very suitable for sake brewing. With the ultimate goal of achieving "sake that satisfies the soul," the brewers work meticulously and tirelessly at every step of the brewing process (including rice steaming, koji making, rice washing and soaking, yeast starter making, fermentation, component analysis, pressing, and bottling). With 130 years of brewing history, each sake from Kanikiku has a unique flavor and rich characteristics, each bottle brimming with the vibrancy of life, representing the crystallization of the brewers' dedication.
