Producer History:
LINNÉ was founded in Kyoto in 2024 by Shoya Imai, former co-founder and toji of WAKAZE. It operates as a phantom brewery—making sake at partner kuras while preparing its own Kyoto site. The 800 (Yao) line uses rice, barley, buckwheat and other koji to widen what “sake” can be. This bottling is a collaboration with Shinpaku farm in Miki, Hyogo, restoring fallow paddies in a Special-A Yamada district.
Sake Introduction:
800 Kome 〈Shinpaku〉 is 67% Yamadanishiki and 33% Kinuhikari from regenerated Kurumi paddies, polished only to 90%. Barnyard millet (hie) that grew in the same fields is made into koji, so the legal category is “other fermented alcohol,” not junmai sake. White koji gives bright acid; a light nigori keeps rice sweetness. Regenerative, pesticide-free farming is the point. Chilled it is herbal and milky-sweet; warmed, the millet leans toward herbal tea.
Tasting Notes:
Nosing: Wind-blown herbs, soft flowers and gentle rice, with earthy millet-tea.
Palate: Usunigori rice sweetness, fresh white-koji acidity and warm hie savour.
Finish: Clean and medium-long, closing on herbs and a light acid cut.
