Kiyasho Shuzo, founded in 1818 by Shohachi Onishi in Nabari, Mie Prefecture, Japan, began as a lumber merchant, hence the name "Kiyasho" meaning "wood shop." The brewery has preserved traditional sake brewing techniques while evolving over generations. In 2004, sixth-generation owner Tadayoshi Onishi, at age 27, took over amid financial struggles. Working solo, he revived the business and launched the "Jikon" brand, inspired by a Zen term for "seize the moment." Focusing on quality and local rice, it gained acclaim for innovative yet rooted expressions, blending heritage with modern finesse.
The Jikon Tojo Yamada Nishiki Hiire Junmai Ginjo is a balanced sake brewed with premium Tojo Yamada Nishiki rice polished to 50%, pasteurized for stability, at 16% ABV.
Nosing: Lush aromas of melon, flowers, strawberry, raspberry, sweet orange, and fresh floral notes.
Palate: Juicy fruity sweetness with ripe melon, strawberry, light umami, medium body, and refreshing acidity for smooth balance.
Finish: Clean and long, with lingering sweetness, bright acidity, and well-balanced dryness.
