Description
Yucho Shuzo was founded in 1719 in Nara Prefecture, Japan, initially as an oil refining business before transitioning to sake brewing. Located in Gose City, the family-owned brewery, now led by the 13th generation Chobei Yamamoto, has innovated since launching the Kaze no Mori brand in 1998, focusing on unfiltered, undiluted, unpasteurized sakes that capture fresh, effervescent qualities. In 2025, they opened the Katsuragi Sanroku Brewery to preserve local satoyama landscapes and advance sustainable brewing.

Sake Introduction
This Junmai Muroka Nama Genshu is made from Nara's native Tsuyuhakaze rice polished to 80%, using No. 7 yeast and the unique Zarutori method—pressing through bamboo baskets for natural effervescence. It offers a wild, medium-dry profile with evolving flavors, best enjoyed fresh or over days for richer umami.

Tasting Notes
Nosing: Fresh melon, mandarin orange, white peach, green banana, floral notes, and subtle white strawberry.
Palate: Balanced sweet, sour, and astringent; juicy with lively acidity, gentle bitterness, creamy umami, ripe fruit like melon and pear, mineral hints, and light fizz.
Finish: Crisp, dry, and refreshing with long, clean umami and effervescent sharpness.
