Brewery Background: Located in Yamaguchi, Hatsumomidi Shuzo is celebrated for its meticulous craftsmanship and four-season brewing, producing high-quality sake. The Harada brand is cherished for its refined flavors and traditional techniques.
Sake Characteristics: This Junmai Daiginjo uses Yamaguchi-grown Isehikari rice, polished to 50%. Originating from Ise Jingu’s sacred fields, Isehikari, dubbed the “phantom rice,” emerged from two typhoon-resistant stalks distinct from Koshihikari, prized for its flavor, resilience, and disease resistance. With 15% ABV, this unpasteurized sake requires refrigeration and is brewed once yearly in limited quantities.
