The unique feature of The Balvenie Double Cask 12 Year Old Single Malt Whiskey is that it has been matured in two different types of casks. To create The Balvenie Double Barrel Series, David Stewart MBE will transfer whiskey that has been aged for at least 12 years in traditional whiskey casks, American oak ex-bourbon and hogshead casks, into Spanish oak ex-Oloroso sherry casks to continue Aged for nine months. Then, the whiskey is transferred to a huge oak container called a "foaming barrel" for 3-4 months, allowing the whiskey to "blend" by itself. Each stage adds a different texture to the final single malt whiskey. Traditional casks soften and add finesse, sherry casks add depth and richness, and the final months in the foaming casks allow the whiskey to blend together better.
