Château Pichon Baron 2007 is a distinguished red wine from the Pauillac appellation in Bordeaux, France, classified as a Second Growth in the 1855 Bordeaux Classification. Produced by the historic estate owned by Baron Philippe de Rothschild, this vintage reflects the challenges and successes of 2007, marked by meticulous vineyard management including thinning and leaf removal to ensure grape health. The weather featured a wet winter and spring, followed by low rainfall in September with mild sunny days and cool nights, promoting color and aroma development. Harvesting occurred in stages from September 18 to October 9, yielding grapes with high sugar content and anthocyanin concentration, alongside normal acidity and swift malolactic fermentation.
The blend comprises 74% Cabernet Sauvignon and 26% Merlot, sourced from the oldest vines on the estate's historic plots. The winemaking process involved gentle fermentation, early racking to confirm refined tannins, and aging for 20 months in oak barrels (80% new and 20% one-year-old). Tasting notes highlight a deep color with purple tints, an intense nose of ripe fruits, roasted coffee, and blackberry; a full-bodied palate with concentrated, ripe tannins, licorice, refined oak, and flavors of blackcurrants and fruit tea; and a long finish with red fruits, chocolate, and subtle spices. This wine offers remarkable freshness, harmony, and subtlety, with an aging potential exceeding 40 years. It has received acclaim, including 92 points from Robert Parker's Wine Advocate for its ripe black fruits and attractive tannins.
