Production Details

Ingredients: Built on Four Pillars Rare Dry Gin, infused with three cold-pressed extra virgin olive oils (picual, hojiblanca, coratina) and olive leaf tea from Victoria’s Cobram Estate. Other botanicals include rosemary, bay leaf, macadamia, lemon myrtle, lemon, grapefruit, coriander seed, juniper, and orris root, blending Mediterranean and Australian flavors.

ABV: 43.8% ABV, ensuring bold flavor for cocktails, non-filtered to retain an oily texture.

Craftsmanship: Distilled in a German copper still, Wilma. Olive leaves are steeped as a tea, then blended with cold-pressed olive oil and other botanicals, refined over a year for balanced flavor. Open-plate distillation enhances body and aroma intensity.

Flavor Profile

Aroma: Fresh mint and juniper pine, with rosemary and bay leaf herbal notes, creamy olive oil texture, macadamia nuttiness, and lemon myrtle citrus, accented by green tea and olive vegetal hints.

Palate: Oily and smooth, with macadamia and olive oil creaminess, rosemary and thyme herbal notes, balanced by juniper and citrus (lemon, grapefruit). A slight salinity and green olive vegetal tone add depth.

Finish: Medium-length, with nutty olive oil and subtle saline notes, ending with crisp juniper, citrus peel, and a cooling minty-herbal layer.
