Description
Distillery: Glenallachie, located near Aberlour in Speyside, was founded in 1967. Historically used for blends like Chivas Regal, it shifted focus to single malts under Billy Walker’s leadership in 2017, renowned for fruitiness and sherry cask maturation.



Bottler: Signatory Vintage, founded by Andrew Symington in 1988, is a leading Scottish independent bottler known for selecting premium single casks, offering high-quality, non-chill filtered, and uncolored whiskies.



Appearance: Deep amber to reddish-brown, with the rich hue of Oloroso sherry butt maturation, reflecting extended cask aging.



Nose: Intense and bold, with classic sherry notes of raisin, date, fig, and dark chocolate, alongside toffee, caramel, and light leather. Some detect orange peel, cinnamon, clove, and subtle oak, with Glenallachie’s signature fruitiness (red apple, pear) in the background.



Palate: Thick and oily, with strong yet balanced alcohol. Sweet sherry fruits (dried fruit, cherry, candied fruit) lead, followed by dark chocolate, coffee, cinnamon, and black pepper. Oak and mild tannins provide structure, balanced by Speyside’s light fruitiness.



Finish: Long and warm, with rich sherry sweetness, roasted nuts, dark chocolate, and subtle peppery spice. Sherry and oak intertwine with slight dryness, remaining balanced.
