Mortlach Distillery was established in 1823 by James Findlater in Dufftown, Speyside, Scotland, as the town's first legal distillery. It passed through various owners, including partnerships with Donald Mackintosh and Alex Gordon, and is now part of the Diageo group. Renowned for its unique 2.81 times distillation process, it produces robust, meaty single malt whiskies, nicknamed "The Beast of Dufftown."
This Mortlach Signatory Cask 204 2007/2025 is a single cask whisky from the Symington's Choice series, distilled on November 27, 2007, and bottled on May 6, 2025, aged for 17 years with a finish in a first-fill Oloroso sherry butt (cask #204). At 56.8% ABV, it is non-chill filtered with natural color, yielding 655 bottles, making it highly rare. The flavor is profoundly influenced by the sherry cask, blending Mortlach's meaty style; the nose features leathery oak, cigar box spice, honeyed malt loaf, and crystallized ginger. The palate is full and sweet, with layers of spiced fruit cake, candied nuts, warm toffee, dried fruits (dates, raisins, prunes), orange rind, mint, vanilla, dark chocolate, and oak spices. The finish is long, carrying oily nuts, sweet tobacco, and meaty malt complexity, highlighting Speyside whisky's depth and elegant balance.
