Distillery History:Sullivans Cove, established in 1994 in Tasmania, Australia, is renowned for its commitment to long maturation and meticulous blending. Guided by the principle of bottling only when the whisky is ready, the distillery has multiple times been awarded World’s Best Single Malt at the World Whiskies Awards. The Double Cask range is crafted by Distillery Manager Heather Tillott and the Sensory Team, marrying the distinct characters of French and American oak.

Whisky Introduction:Double Cask DC121 is a small-batch vatting with components aged from 7 to 18 years in a mix of French and American oak casks. Bottled in September 2024 at 47.3% ABV with a yield of 1,295 bottles, it showcases Sullivans Cove’s signature creamy texture, tropical and stone-fruit notes, and exceptional length and complexity – a refined expression of the art of blending.

Tasting Notes:Nosing: Fresh and broad, with sour apple, sherbet and buttermilk leading into caramel, Turkish delight and toasted grains.Palate: Creamy and full, showing savoury spice, dark chocolate, burnt butter and sage, with hints of citrus and brine.Finish: Long and powerful, filled with rich caramel, hazelnut, banana and warm Christmas spice.
