Walsh Whiskey Distillery was established in 1999 by Bernard and Rosemary Walsh, a husband-and-wife duo who left their IT careers in London to return to Ireland and revive the country's whiskey tradition. Starting with Hot Irishman, a pre-mixed Irish coffee that became a hit, they built a foundation for premium spirits. Bernard's entrepreneurial spirit and Rosemary's marketing acumen drove their vision to blend heritage with modern innovation. By 2013, they partnered with Italian company Illva Saronno to construct a cutting-edge distillery on the historic Holloden Estate in Royal Oak, County Carlow. This site, featuring a mansion from 1755, became home to the first new distillery in Carlow in over 200 years. Production began in 2016 with three copper pot stills and a column still, enabling diverse whiskey styles like single malt, single pot still, and grain. Walsh Whiskey launched brands such as The Irishman, honoring Ireland's distilling past, and Writers' Tears, inspired by literary figures. Their whiskeys quickly gained international acclaim for quality and authenticity. However, in 2021, amid strategic differences, Walsh Whiskey split from Illva Saronno. The Walshes retained the brands, recipes, and maturing stock, while the distillery was renamed Royal Oak under Illva's control. Today, Walsh Whiskey sources from trusted Irish partners, focuses on small-batch releases, and continues contributing to the Irish whiskey renaissance through awards and global exports. Their story exemplifies resilience and passion in a reviving industry.
The Irishman Single Malt is a quintessential Irish whiskey, crafted from 100% malted barley and triple-distilled in traditional copper pot stills for exceptional smoothness. Aged in a combination of first-fill bourbon and sherry casks, it embodies the elegance of Irish single malt with a balanced profile that appeals to both newcomers and seasoned enthusiasts. Bottled at 40% ABV, this expression highlights the brand's commitment to quality, drawing from Ireland's rich distilling heritage while incorporating modern precision. Its golden hue reflects careful maturation, offering a versatile sip that's perfect neat, on the rocks, or in cocktails.
Nosing: The aroma opens with delicate honied malt and vibrant fruity notes, including ripe peaches, green apples, and subtle orange blossom. Creamy vanilla and vanilla fudge intermingle with hints of malted barley, butter cookies, and a touch of licorice, creating a light and inviting bouquet. Underlying toasted wood and gentle honey add warmth, evoking a fresh orchard with a soft cereal earthiness that promises complexity without overpowering.
Palate: Silky and medium-bodied on entry, it bursts with candied fruits like figs and dried apricots, balanced by toasted almonds and a hint of pine nuts. Vanilla cream and subtle citrus zing provide a refreshing lift, while notes of malt chocolate, honey, and oak spice unfold in layers. The sherry influence brings a touch of sweetness and nuttiness, transitioning smoothly to a gentle warmth that highlights the triple distillation's refinement, making it approachable yet deeply flavorful.
Finish: Lingering and luxurious, with sundried raisins, oak tannins, and a creamy texture that fades into subtle wood and honeyed sweetness. A clean, balanced aftertaste echoes the fruity and malty elements, leaving a satisfying warmth that invites contemplation. Overall, this single malt showcases Irish whiskey's charm through its harmonious blend of fruit, malt, and oak.
