Sake Information:Takagi Shuzo Juyondai Bessen Shohaku Junmai Daiginjo Banshu Yamada Nishiki, brewed by Takagi Shuzo in Yamagata Prefecture, using 100% Banshu Yamada Nishiki rice from special A grade area in Hyogo Prefecture, rice polishing ratio 45%, 16% ABV, Junmai Daiginjo (some versions nama-zume), belonging to the premium Bessen series upgraded version.
Brewery HistoryTakagi Shuzo, located in Yamagata Prefecture, has a history of over 400 years as a long-established sake brewery. The 14th generation brewer, Takagi Tatsugoro, took over during the economic bubble period and faced challenges such as the retirement of the toji (master brewer). He still insisted on high-quality brewing and developed the “Juyondai” series, renowned for its delicate fruit aromas and elegant balance. Juyondai has won international sake awards for many consecutive years, becoming a legendary brand in the Japanese sake world. It emphasizes traditional craftsmanship combined with modern refinement, with limited production that is highly prized by enthusiasts worldwide.
Special FeaturesThis is an upgraded version of the “Bessen Shohaku” series. Since 2022, the rice polishing ratio has been improved from 50% to 45%, using the highest-grade Banshu Yamada Nishiki from Hyogo’s special A area to fully showcase the umami and delicate character of the “King of Rice,” Yamada Nishiki. “Shohaku” is an ancient elegant name for sake, and “Bessen” represents a high-grade “Tokusen” level in the old classification system. As a Junmai Daiginjo, it offers a lighter, clearer profile with unique refreshing coolness and bold melon-like fruit aromas. Ideal for sipping neat or as an aperitif, it perfectly embodies the elegance and robust aftertaste of Yamada Nishiki, making it one of the most popular premium expressions in the Juyondai lineup.
Taste ProfileNosing: Elegant and fresh, with juicy melon and fruit aromas (such as honeydew melon, green apple, ripe fruits), accompanied by light floral notes and a refreshing cool sensation, plus pure and delicate rice fragrance.Palate: Smooth, light and silky, blending sweet fruit notes with Yamada Nishiki umami, offering a delicate yet balanced mouthfeel with subtle fruit acidity and solid rice sweetness, rich in layers.Finish: Delicate and long-lasting, with strong and firm umami return, noticeable fruit acidity, and a dense, warm aftertaste that lingers beautifully.
