釀造細節

  • 原料米：秋田縣產「美鄉錦」，以濃郁米香與細膩質地著稱。
  • 精米歩合：55%，屬中高精米範圍，去除外層45%的米糠，保留米的精華，呈現平衡的風味與純淨感。
  • 酵母：No. 6酵母，帶來優雅果香與細膩酸度。
  • 釀造法：採用傳統生酛法，通過自然乳酸發酵增添複雜性。全量杉木桶發酵，賦予淡雅木質與香料氣息。
