Brewery History
Matsumoto Sake Brewing Co. was founded in 1791 in Kyoto's Fushimi district, one of the oldest breweries in the region, designated as a National Heritage site. With a history from the Edo era, the current building dates to the late 19th century. The brewery emphasizes preserving tradition while innovating, as reflected in the "Shuhari" philosophy: Shu (protect tradition), Ha (break new ground), Ri (create a new taste for the future).

Sake Introduction
This Junmai Daiginjo is brewed with 100% Yamada Nishiki rice polished to 50%, delivering a refined, modern style with fresh fizz, balanced five tastes (sweet, sour, umami, bitter, salty), and evolving complexity.

Tasting Notes
Nosing: Aromas of honeysuckle, lemon pith, honeydew, melon, and pear.
Palate: Rich and fleshy with white peach, ripe pear, winter melon, umami, soft sweetness, tangy acidity, and mineral notes.
Finish: Crisp, dry, and refreshing with a long, clean aftertaste.
