菊之司 心星 SHINBOSHI 純米吟釀 生酒 - 720ml

Brewery History:
Kikunotsukasa was founded in 1772 in Shizukuishi, Iwate—one of the prefecture’s oldest kuras—and follows Nanbu toji tradition. Brewing water is soft spring water from the Nakatsugawa / Mount Iwate system. Core brands include Kikunotsukasa and Shichifukujin; recent unfiltered nama and dark-bottle lines target newer drinkers. Shinboshi is another name for the North Star: a fixed light over the northern sky.

Sake Introduction:
Shinboshi is a junmai ginjo from 100% Iwate Gin-otome rice polished to 50%. Blended ginjo yeasts (often kyokai 1801 and 901) ferment cool; SMV is about −2, acidity about 1.5, bottled as 14% genshu. This nama is brighter and fruitier than the hiire and must be kept cold. Melon and strawberry lead; the palate is juicy and gently sweet-sour—easy with food or on its own. A frozen-nama (tomin) version also exists to lock in press-fresh aroma.

Tasting Notes:
Nosing: Melon, strawberry and white grape, with apple and pear freshness.
Palate: Light, sweet-umami and juicy, with bright acidity and a silky feel.
Finish: Clean and refreshing, with a faint bitter flick.
