Fully matured in sherry casks, this 21-year-old unveils deep, marbled richness. Nosing is profound, opening with Oloroso sherry, sultanas, roast chestnuts, cherries in dark chocolate, evolving to cocoa, coffee, tobacco, cinnamon, nutmeg, and endless warm depth. The palate is creamy and mouth-filling, drying with sweet spice like sticky toffee pudding, apple, cherries, raspberries, red plums, dried figs, toasted walnuts, leather, and marzipan—balancing darker notes with bright juiciness. It's velvety, with flashes of fruit amid sherry intensity. The finish is long, spicily sweet reminiscent of gingerbread, fading to warm chestnut and subtle smoke. This treasure showcases sherry's transformative power on Dailuaine's robust base.
Dailuaine Distillery, in Speyside's Carron village, was founded in 1852 by farmer William Mackenzie. Named from Gaelic "An dail uaine" (green vale), it benefited from the 1853 Strathspey Railway, becoming one of Speyside's largest. After Mackenzie's 1865 death, his widow leased it, and son Thomas rebuilt in 1884 with innovative designs like the first pagoda roof by Charles Doig. In 1898, it merged with Talisker, forming Dailuaine-Talisker Co., acquired by DCL in 1925, now Diageo. It pioneered steam engines and rail sidings for efficiency. Closed during wars, it expanded in the 1960s to six stills, producing 5 million liters. Known for meaty, robust malts used in blends like Johnnie Walker, it rarely bottles single malts. Its history highlights Speyside's industrial growth, from rural farm to innovative powerhouse.
