Production Details

Ingredients: Based on Rare Dry Gin , infused with cool-climate Shiraz grapes (destemmed but whole), stirred daily in chilled tanks for 8 weeks, then pressed and blended with additional Rare Dry Gin. Botanicals include juniper, Tasmanian pepperberry, coriander seed, green cardamom, cinnamon, star anise, lavender, angelica root, lemon myrtle, and orange peel.

ABV: 37.8% ABV (classified as a gin liqueur in the US due to being below 40%), non-filtered, recommended for consumption within two years of release to preserve optimal fruit flavor.

Craftsmanship: Distilled in a German copper still named Wilma, blending traditional and modern techniques, emphasizing Australian botanicals like lemon myrtle and organic oranges for enhanced fruit and spice notes.

Flavor Profile

Aroma: Rich red fruit notes (raspberry, blackberry, blackcurrant) with juniper’s piney freshness, complemented by white pepper, citrus, and subtle herbal and spice notes (coriander, lavender), with a sweet grape juice character.

Palate: Sweet yet balanced, with a full body, featuring jammy red berries and black grape flavors, juniper spice, peppery warmth, and lemon peel freshness. Herbal (rosemary, thyme) and nutty (angelica) notes add complexity.

Finish: Short and crisp, dominated by juniper and pepper, with lingering raisin, dark chocolate, and slightly bitter tannin notes, accented by a touch of roasted coffee.
