Winery HistoryPenfolds was founded in 1844 by Dr Christopher Penfold in South Australia, beginning with medicinal wines. Legendary winemaker Max Schubert launched Grange in 1951, establishing Australia’s fine wine reputation. Bin 407 was first released in 1993 (1990 vintage) in response to abundant high-quality Cabernet Sauvignon fruit. Inspired by Bin 707, it highlights Penfolds’ multi-regional blending philosophy, delivering Cabernet structure and varietal purity, and has become a classic Cabernet Sauvignon in the range.
A classic Penfolds Bin 407 Cabernet Sauvignon, the 2023 vintage is 100% Cabernet Sauvignon sourced from multiple South Australian regions including Padthaway, Coonawarra, McLaren Vale, Barossa Valley and Wrattonbully. Matured for 12 months in French oak (21% new) and American oak (11% new) hogsheads. It embodies Penfolds’ multi-district blending, offering definition, approachability and depth. Not a special edition but an excellent pure Cabernet expression.
Tasting Notes
Nosing:Deep and powerful with blackcurrant, blackberry, black cherry, dark chocolate, bay leaf, licorice, graphite and subtle vanilla oak, plus dried herb and forest fruit notes.
Palate:Full-bodied, rounded and concentrated with refined tannins framing dark fruits, cocoa, spice and light smokiness; bright acidity and balanced, focused mid-palate.
Finish:Long and refined with black fruit, cedar and licorice echoes; fine structure and elegant persistence.
