Producer History:Founded in 2010 by the Mestre brothers, Los Siete Misterios works with small traditional producers in Oaxaca to preserve ancestral mezcal-making methods while introducing modern expressions. Doba-Yej (Zapotec for Espadín) is their first copper-still mezcal from outside the traditional Sola de Vega region.
Mezcal Introduction:Doba-Yej is made from ripe Espadín agave cooked in underground conical pits, milled by tahona, fermented in wooden tanks, and double-distilled in copper stills. It offers a smoother, more approachable profile than traditional clay-pot Espadín while retaining authentic smoke and minerality.
Tasting Notes:Nosing: Citrus (orange, lime), baked apple/pear, cooked agave, piloncillo and subtle smoke.Palate: Smooth with rich agave sweetness, stone fruit, light pepper and earthy minerality.Finish: Long, smoky with lingering sweet agave and subtle heat.
