Distillery History:

Caol Ila was founded in 1846 by Hector Henderson near Port Askaig on Islay, one of the island’s largest producers. Renowned for its intense maritime peat smoke and mineral character from Loch Nam Ban water. Owned by Diageo, it mainly supplies Johnnie Walker blends with limited official single malts. Independent bottler Signatory Vintage, established in 1988, specialises in premium selections. Its 100 Proof Edition series bottles at fixed 57.1% ABV, undiluted, un-chillfiltered and natural colour to showcase Caol Ila’s full smoky power.

Whisky Introduction:This Signatory Vintage 100 Proof Edition #70 matured 13 years in First-Fill & Refill Oloroso Sherry Butts and Refill Hogsheads. Bottled in 2026, it blends Caol Ila’s classic coastal peat smoke with rich dried fruits, dark sugars and spices from the sherry casks, delivering a bold yet balanced Islay profile.

Tasting Notes:Nosing: Coastal peat smoke, sea spray, lemon peel, sultanas, cocoa powder and lightly charred oak.Palate: Full-bodied and oily – bonfire ash, smoked citrus, dark fruits, treacle, clove and warming sherry spice.Finish: Long, drying and smoky with salted caramel, ashy peat and spiced fruit.
