Distillery History:Highland Park, located in Kirkwall on the Orkney Islands, was founded in 1798 and is one of Scotland’s northernmost distilleries. Renowned for using local peat and floor-malted barley, it delivers a signature style of heather honey, gentle peat smoke and maritime minerality. Independent bottler Signatory Vintage, established in 1988, excels at selecting exceptional casks. Its Cask Strength Collection offers undiluted, un-chillfiltered whiskies in natural colour, revealing the true depth of Orkney (HP) single casks.

Whisky Introduction:This Signatory Vintage Cask Strength single cask was matured for 20 years in a First-Fill Oloroso Sherry Butt. Bottled in 2025 as Cask #DRU17 A63 #2 with only 608 bottles, it beautifully marries Orkney’s classic honeyed peat with rich dried fruits and sweetness from the sherry cask, creating an elegant and balanced island profile.

Tasting Notes:Nosing: Rich and inviting with dark chocolate, stewed red fruits, cola nut, lovage, heather and gentle peat smoke.Palate: Full-bodied and balanced – sweet red berries, dark chocolate, oak spice, light peat and mineral salinity.Finish: Long and graceful, lingering peat smoke, dried fruit and honey with warm wood and spice.
