Producer History:
Signatory Vintage was founded in 1988 by Andrew Symington and is one of Scotland’s leading independent bottlers; it acquired Edradour Distillery in 2002. The company is known for single-cask, cask-strength releases with no chill filtration or added colour. Its Speyside (M) series draws on a highly regarded parcel of 2005 first-fill Oloroso sherry butts and has become one of Signatory’s most closely watched undisclosed Speyside lines.

Whisky Introduction:
This 21-year-old single cask from the Cask Strength / Symington’s Choice range is cask DRU17 A106 #108, bottled at 59.4% in 70cl. Sister casks from the same warehouse code were distilled in July 2005 and matured entirely in first-fill Oloroso sherry butts. Labelled Speyside (M) for licensing reasons, it offers the rich dried-fruit, chocolate and spice profile associated with this parcel—un-chill filtered and naturally coloured, and one of the longer-aged bottlings from the same family of casks.

Tasting Notes:
Nosing: Raisins, figs, plums and orange marmalade, with dark chocolate, coffee and toffee.
Palate: Full and robust with dried fruit, black chocolate, leather and peppery spice; a true sherry-led dram.
Finish: Long and warming, with cocoa, black tea, caramelised nuts and oak tannin.
