Sullivans Cove Distillery was founded in 1994 on Hobart's waterfront with the vision of crafting world-class whisky at the edge of the world using Tasmanian ingredients. After early challenges, it relocated to Cambridge in 2004 under Patrick Maguire, focusing on precision, patience, and innovation with a Cognac-style Charentais still for a heavier spirit. In 2014, a French Oak single cask became the first outside Scotland or Japan to win World's Best Single Malt at the World Whiskies Awards; further wins followed in 2018 and 2019. Today, led by head distiller Heather Tillott, the distillery produces rare single cask releases and core expressions in small batches, matured in cool Tasmanian climate for unique depth and character, driven by curiosity and distinctly local craftsmanship

Sullivans Cove Double Cask DC120 is a limited single malt release, masterfully blended by Distillery Manager Heather Tillott and the team from French oak ex-tawny and American oak ex-bourbon casks. Batch DC120 yields 1,328 bottles at 47.4% ABV, with spirits aged 6 to 18 years, capturing tropical and stone fruits, caramel, vanilla, spices, and nutty, floral, herbal nuances for rich complexity.

Nosing: Creamy and bright with zesty lift, deepening into spices (clove, anise, cardamom, cinnamon, nutmeg, ginger, pimento) laced with finger lime; anchored by roasted pumpkin, buttery pastry, fresh honeycomb, macadamia, strawberry jam, raspberry liquorice, and spearmint jelly.Palate: Full and weighty with waxy mouthfeel; layers of anise, herbal notes, black cat lolly, jelly babies; brandy-soaked fruit loaf, sautéed plums, raisins, chilli dark chocolate, brandy cream, and vanilla custard cannoli.Finish: Long with gentle tannin structure fading to silky mouthfeel; notes of raspberry tart, maple-drenched waffles, icing sugar, dissolving chocolate powder, nutty praline, whipped ganache, hazelnut, macadamia, and salted pistachio.
