Sullivans Cove Distillery was founded in 1994 on Hobart's waterfront with the vision of crafting world-class whisky at the edge of the world using Tasmanian ingredients. After early challenges, it relocated to Cambridge in 2004 under Patrick Maguire, focusing on precision, patience, and innovation with a Cognac-style Charentais still for a heavier spirit. In 2014, a French Oak single cask became the first outside Scotland or Japan to win World's Best Single Malt at the World Whiskies Awards; further wins followed in 2018 and 2019. Today, led by head distiller Heather Tillott, the distillery produces rare single cask releases and core expressions in small batches, matured in cool Tasmanian climate for unique depth and character, driven by curiosity and distinctly local craftsmanship
Sullivans Cove Single Cask French Oak Cask TD0288 is a rare limited single cask release matured in a 300L first-fill ex-Tawny French Oak cask. Filled 1 June 2007 and bottled 13 May 2019 at cask strength 47.6% ABV after ~12 years, yielding only 478 bottles. It exemplifies the iconic French Oak series' porous wood influence, delivering tailored rich tannins and deep aromatic complexity that helped secure the distillery's global awards.
Nosing: Smooth gleeful prunes lifting oak and leather, fresh pasture, sugared almonds, buttered charred toast, smoked black tea; burnt toffee, cherry blossom, orange peel, dried fruits and cocoa.Palate: Oak-led marzipan sweetness with plums, ginger flower, raisin bread and bread pudding vanilla sauce; rich, balanced and poised.Finish: Blackcurrant jam infused with tea tannins, elegant and lingering.
