Distillery History:Sullivans Cove, based in Cambridge near Hobart, Tasmania, is one of Australia’s leading single malt distilleries. Renowned for small-batch single cask releases and high-quality French oak maturation.

Whisky Introduction:The French Oak Second-Fill TD0374 is a single cask matured in a 300L French oak barrel previously used for an earlier Sullivans Cove whisky. Distilled October 2012 and decanted July 2025, it highlights the refined, aromatic character of second-fill French oak while letting the spirit shine.

Tasting Notes:Nosing: Rich brown sugar, molasses, dark rum, spice, cherry tart and cocoa.Palate: Light, syrupy and subtle, with vanilla cream, bubble gum, watermelon and cotton candy.Finish: Lingering and creamy with strawberry, pink donut, apple turnover and coconut icing.
